Shrimp Jambalaya

Ingredients

* 1 tsp. olive oil
* 2 oz. turkey kielbasa, halved lengthwise and sliced
* 1/2 cup onion, minced
* 1/2 cup green bell pepper, diced
* 1/2 cup long-grain rice, uncooked
* 1/8 tsp. salt
* 1/8 tsp. dried thyme
* 1/8 tsp. black pepper
* 1/8 tsp. ground red pepper
* 1 cup water
* 1- 10.5 oz. can low-sodium chicken broth
* 1- 14.5 oz. can diced tomato, undrained
* 1/2 pound medium shrimp, peeled
* 1/8 tsp. hot sauce
* 1 tsp. fresh parsley, chopped

Instructions

1. Heat oil in a medium saucepan over medium heat
2. Add kielbasa, onion, and bell pepper; saute 5 minutes or until vegetables are tender
3. Add rice; saute 2 minutes
4. Add salt and next 3 ingredients; saute 1 minute
5. Add water, broth, and tomatoes; bring to a boil
6. Cover, reduce heat and simmer 15 minutes or until rice is tender
7. Stir in shrimp and hot sauce
8. Cover and cook 5 minutes or until shrimp are done
9. Remove from heat; stir in parsley
