Mexicali Pie
4 Points Per Serving
16 oz Lean Ground Beef (90%)
1/2 cup chopped onion
1/2 cup chopped green chilies
1 1/2 cups frozen corn
1 cup chunky salsa
3/4 cup reduced-fat cheddar cheese
1/8 tsp. black pepper
1/2 tsp. ground cumin
1 cup crushed corn chips
Preheat oven to 350º. In a large skillet sprayed with Pam, brown meat, onion
and chilies.
Drain off grease. Add corn, salsa, cheese, pepper and cumin. Spray a 10 inch
pie plate with
Pam. Place meat mixture in the pie plate and top with the crushed corn chips.
Bake for 30
minutes, cool 10 minutes before serving.
