Hamburger Club Sandwich

8 ounces extra-lean ground beef (10% or less fat)

12 slices reduced-calorie multi-grain bread

3 tablespoons reduced-calorie mayonnaise 8 medium iceberg lettuce leaves

1 tablespoon + 1 teaspoon imitation bacon bits

2 medium tomatoes, sliced

1/4 teaspoon salt

Freshly ground black pepper, to taste

Spray rack in broiler pan with nonstick cooking spray. Preheat broiler. Form beef into four 4"
patties; place onto prepared rack. Broil 4" from heat, turning once, 8 minutes, until cooked
through. Slice burgers into halves horizontally, making 8 thin burgers; set aside. Lightly toast
bread; spread each toast slice with 3/4 teaspoon mayonnaise. To assemble sandwiches,
place 4 toast slices, spread-side up, onto work surface; top each with 2 lettuce leaves, 1 thin
beef burger, 1 teaspoon bacon bits, another toast slice, another thin beef burger, one- fourth
of the tomato slices, the salt and pepper and 1 remaining toast slice, spread- side down. Cut
sandwiches diagonally into halves.
