Chinese Chicken Salad
5 Points Per Serving
Ingredients:

1/2 cup low fat mayonnaise
2 tbs soy sauce
2 tsp fresh ginger, finely grated
500 g BBQ chicken breast without skin, shredded
100 g snowpeas, ends trimmed, cut in half on diagonal
1/2 whole capsicum, (red) deseeded, finely chopped
1 whole fresh carrot, peeled, grated
4 individual shallots, ends trimmed, thinly sliced
80 g lettuce, (butter lettuce)

Directions:

* Combine mayonnaise, soy sauce and ginger in a large bowl. Whisk until blended. Season to taste with salt and pepper and set aside.

* In a seperate bowl, combine chicken, snow peas, capsicum, carrots and shallots. Toss to combine, then add mayonnaise and toss to coat. Serve immediately in lettuce cups or cover and refrigerate for up to a day.
