Chicken Spaghetti
Core Recipe
1 whole chicken
1/4 c. canola oil
1 1/2 c. chopped onion plus some onion chunks
1 c. chopped celery plus some celery chunks
1 c. chopped bell pepper
1/4 c. chopped parsley
1/4 c. chopped green onions
1 can Italian tomato paste
4 cloves of garlic (chopped)
1 Tbsp. lemon juice
2 Tbsp. chili powder
Salt & pepper to taste
1 pint of tomato juice (this would need pts.)
2-12 oz. pkgs of whole wheat spaghetti
Boil the chicken and put chunks of onion and celery into water with
it. Put chicken to the side to cool and put broth into another pot.
Using same pot you boiled chicken in, saute onion, celery, bell
pepper, parsley & green onions in canola oil until tender.
Add tomato paste to cooked veggies over a low fire, stirring
constantly until paste turns dark. Add seasonings, chicken meat,
tomato juice and some of the broth (how much depends on how thin
you like your sauce). Cover and simmer for 1 hour, adding broth as
needed. Boil your spaghetti seperately in extra broth and then mix
with sauce.
