Chicken Roll-Ups
6 Points Per Serving
1 lb. boneless, skinless chicken breasts
1 cup alfalfa sprouts
1/2 cup sliced water chestnuts
1/2 cup fat-free creamy Italian dressing
4 (8-in.) fat free flour tortillas
4 green leaf lettuce leaves

Add enough water to a large saucepan or Dutch oven to cover chicken. Bring
water to a boil
over medium-high heat; reduce heat to low. Add chicken, and simmer 10
minutes or until
chicken is done.

While chicken cooks, combine water chestnuts, sprouts, and dressing in a
bowl.

Remove chicken from Dutch oven; cool slightly and chop, Add chopped
chicken to sprout
mixture, tossing well.

Wrap tortilla in plastic wrap, and microwave at HIGH 30 seconds or until
heated. Place a
lettuce leaf on each tortilla; spoon chicken mixture evenly onto each lettuce
leaf. Roll up
each tortilla, and serve immediately.
