Banana Bread Recipe

3 ripe bananas, well mashed

1/3 cup sugar

1/2 cup egg substitute

1 tsp. salt (optional)

2 cups flour

1 tsp. baking soda



Preheat oven to 350º. Spray a loaf pan with cooking spray. Mix the bananas and egg substitute
together in a large bowl. Stir in the flour, sugar, salt and baking soda; blend. Put the batter in
the pan and bake 1 hour or until a toothpick inserted in the center comes out clean. Remove
from pan to a wire rack. Serve still warm or cooled
