Meatball Stew
8 ounces lean ground beef (10% or less fat)
8 ounces ground skinless turkey breast
1 medium onion, minced
1/4 medium green bell pepper, minced
2 ounces uncooked long-grain rice
1/4 cup minced fresh flat-leaf parsley
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon dried thyme leaves
1/4 teaspoon dried marjoram
1 teaspoon vegetable oil
1 cup pearl onions
1 1/2 cups tomato sauce (no salt added)
1 cup baby carrots
2 medium celery stalks, sliced
1/4 cup low-sodium beef broth
1 garlic clove, minced

In medium bowl, combine beef, turkey, minced onion, bell pepper, rice, parsley,
salt, black pepper, thyme and marjoram; form into 12 equal meatballs. Set aside.
In large nonstick skillet, heat oil; add pearl onions. Cook over medium heat,
stirring frequently, 8-10 minutes, until onions are golden brown. Stir in tomato
sauce, carrots, celery, broth and garlic; bring liquid to a boil. Add meatballs in a
single layer; spoon liquid over meatballs. Reduce heat to low; simmer, covered,
basting once or twice with liquid, 45 minutes, until vegetables are tender and
meatballs are cooked through. Divide evenly among 4 plates and serve.

SERVING (3 MEATBALLS WITH 3/4 CUP VEGETABLE MIXTURE) PROVIDES:
