2 teaspoons vegetable oil 3 medium onions, thinly sliced 4 large garlic cloves, minced 15 ounces boneless lean beef loin or round, cut into 2" cubes 2 tablespoons mild or 1 teaspoon hot Hungarian paprika 2 cups tomato sauce (no salt added) 1 cup low-sodium beef broth 1/2 teaspoon dried thyme leaves In large nonstick skillet, heat 1 teaspoon of the oil; add onions. Cook over medium heat, stirring frequently, 8-10 minutes, until onions are golden brown. Stir in garlic; cook, stirring frequently, 2 minutes. With slotted spoon, remove onion mixture from skillet; set aside. In same skillet, heat remaining 1 teaspoon oil; add beef. Cook over medium heat, stirring frequently, 8-10 minutes, until beef is browned on all sides and cooked through; reduce heat to low. Sprinkle beef with paprika; cook, stirring constantly, 2-3 minutes, until beef is evenly coated (do not burn). Add tomato sauce, broth, thyme and reserved onion mixture to beef mixture; bring liquid to a boil, scraping up browned bits from bottom of skillet. Reduce heat to low; simmer, covered, stirring occasionally, 1 1/2-2 hours, until beef is very tender. Divide evenly among 4 plates and serve.
